  • After it is ready, transfer from the oven to the serving plate. Besides it, serve the mango mixture and serve with lemon slices.

Jamaican chicken with mashed potatoes

Ingredients

  • 1 small sweet potato
  • ¼ teaspoon vegetable oil
  • 1 teaspoon seasoning of jerk Caribbean
  • ½ cup chopped tomatoes
  • ¼ cup of chicken broth
  • 1 small boneless, skinless chicken breast
  • 1 tablespoon green onions finely sliced
  • ½ teaspoon of margarine or butter

Directions

  • Wash the potato and trim the ends. Place it in the microwave under shallow dish for about 5 minutes until ready. Turn it after every 2 minutes and let it stand once it is well cooked.
  • As the potato cooks, brush the chicken breast with oil on both sides. Rub the seasoning on both sides too.
  • Place the chicken on the oven in nonstick skillet coated with some cooking spray for about 6 minutes until it turns brown. Add tomatoes, beans, and the broth on skillet. Let it boil as you simmer until the chicken is no longer pink in color. Now you can add onions in the bean mixture.
  • Scoop pulp from the potato and mash it slightly. Stir it in butter and return it into the microwave in a safe dish. Serve onto a serving plate and topping with the meat and vegetables. Serve while hot.
